Roaster's Notes: 

Papua New Guinea is part of an island off the north coast of Australia. They share a border with Indonesia, but the two countries are actually quite different. My friend who currently lives in Papua New Guinea (PNG) recently visited and told me about the coffee grown in that region. He mentioned how coffee trees are everywhere and many people just haven them around their homes and along the side of the road. It made me curious about the coffee from that region so I purchased some samples and found one that I really enjoyed. If you've never tried coffee from PNG, you should give it a try! Coffee is one of the major agricultural exports for PNG and generally one of the top 10 exports for the whole country. Coffee in the Simbai region is transported by airplane due to the rugged terrain. The locals call this "balus kopi" which translates to "airplane coffee". There are over 4000 different growers in that region that carry their coffee to the airstrip to be exported out, so while this is not a single farm, it is definitely a single region.

This coffee has pungent aroma that stands out. The dry grinds exhibit strong cocoa notes with a dried fruit accent and a tobacco-like darkness. The brewed cup has strong bittersweet chocolate and nutty notes. There's a pleasant sweetness as the cup cools and you start to pick up more subtle dried fruit undertones. I wouldn't call the coffee bright, but it does have a medium acidity that shows itself on the front end but gives way to a syrupy sweet mouthfeel. This coffee is quite versatile and will go well with many different styles of brewing, including milk beverages. Being primarily bourbon cultivar, it has much of the same characteristics of Central and South American washed coffees.
