Roaster's Notes: This coffee was graded at 93.7 points, making it one of the highest grade coffee's that I've ever roasted. The washed Ethiopian heirlooms tend toward more floral notes than their natural processed counterparts, which was true of this coffee as well. I found if I pushed the color too much, it lost too much of the brightness and aroma that makes this coffee shine. Due to some of my early test roasts tasting a little more hollow, I ended up roasting it a little slower than is typical of an Ethiopian, hitting first crack around 8:15-8:30 and targeting a 12% moisture loss. This coffee deserves the proper attention to grind size, brew temperature, and brew method to get the most out of it, which is why I recommend pour over. I hope you enjoy!
