Roasters Notes: Being primarily made up of Caturra and Bourbon varietals, I wanted to try and extract as much of the chocolatey and nutty flavors as possible without getting into the bitter territory. I settled on a 14% target moisture loss that helped maintain some of the brightness and subtle fruitiness found from this lot. I slowed the roast down in the early Maillard phases intentionally to give it more thickness in the body and greater complexity so it shines equally as a black cup of coffee or as an espresso shot.
