This roast almost never came to be. I ordered some samples and really liked it but it went out of stock at my supplier before I had a chance to order. Coffee is a seasonal, agricultural product, so often, once it goes out of stock, you can't get it again until the next season. To my surprise, they had a 2nd shipment on order and it came back in stock. I quickly grabbed a bag so we can all enjoy this wonderful coffee. \u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eDecaf roasts much different than non-decaf coffee because the process of decaffeination changes the structure of the bean slightly and makes it more brittle. This means its prone to damage and cracking, so you might notice more shards in your bag. It's also tricky because the bean starts off more brown than green, so normal color changes during roasting don't really apply. Generally, decaf beans roast a little faster.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eI took this roast about 1.5 minutes into first crack, which being on the lighter side, preserved more of the subtle fruity notes. There's a little bit of tang to this, somewhere between dried citrus peels and green apple. But the real standout flavor is the brown sugar and caramel that lingers on your tongue. There's some chocolate in there at the front but then quickly fades into the background. \u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eNote that while the green bean is certified Organic and Fair Trade, Roasters Notebook does not have the certification to officially label it as such on the bag.
