I settled on a 14% target moisture loss that helped maintain some of the brightness and subtle fruitiness found from this lot. I slowed the roast down in the early Maillard phases intentionally to give it more thickness in the body and greater complexity so it shines equally as a black cup of coffee or as an espresso shot. I found it to have very classic chocolatey, sweet flavors but with a slight citrus pop in medium roasts that was too interesting to ignore. You can definitely enjoy this one black but it also makes for great milk-based drinks.
